Shakshuka

 Shakshuka

 For 3-6 as an appetizer

 Ingredients

 3 spoons olive oil

1 large chopped onion

1red bell pepper chopped

1/2 spicy green pepper chopped

5 large tomatoes, red ripe, peeled and chopped

2 cloves garlic minced

1 spoon sweet paprika

1 spoon tomato paste

1/2 teaspoon ground cumin

1/2 cup hot water

salt & pepper

6 eggs

Heat olive oil in large pan. Add onions and steam on low flame until the onions appear clear, add the red pepper and spicy green pepper fry for 2 minutes.

Add tomatoes and fry for 5 minutes.

Add garlic, paprika, tomato paste, cumin and fry for another minute.

Add the hot water and cook for 5-10 minutes on low flame.

While stirring add salt and pepper, by using a spoon create 6 craters, break the eggs into each crater and add salt.

Cover the pan and cook till the eggs harden or till you fancy.

 

We recommend adding a piece of Halumi cheese grilled with olive oil.
